2pm Meal – Mini Quiche
This one is a favorite of mine, basically you are going to have 3 mini quiches almost every day, with some Greek yogurt and salad dressing.
INGREDIENTS
- 24 Eggs from the store, you want to buy the 18 pack as the other 4 actually are used in the turkey meatloaf recipe
- 1 small 2 cup pack of your favorite cheese. I tend to do mozzarella as its my favorite but go with whatever you want. Also Monterey jack extra spicy works great.
- 2 handfuls of spinach, just get one of the giant bags at your local store (winco popeyes brand is my go to)
- 1 bushel of green onions. These are the healthier lower carb onion option.
- Package of turkey bacon (pre cooked) I just get the cheap store brand
- Salt
- Pepper
- Garlic Powder
- Paprika
- Half and Half
- Salad Dressing – Go for the refrigerated lite house brands
- Greek yogurt – Get fage brand
DIRECTIONS
- Take your green onions and break them up then put them in the blender and run it. It normally wont chop them all well to start, but that’s expected.
- Add in your spinach and cheese now. Chop them up well
- Add in now your package of turkey bacon

- Add your 24 eggs in the blender now with your spices and and half and half. Blend that all together until the green onions are chopped up well.
- Get a 2x 12 piece muffin containers (get this one https://www.amazon.com/gp/product/B078WHGTT3) and put an equal amount in each one. One of those large spoons works best. Keep in mind it rises a bunch so dont worry if its only half full.
- Cook at 300 degrees F for 20-23 minutes. You know its done when they are popping out and going sideways.
- Take it out, and using 2 spoons put them in a tupperware container. They are fine being stacked on eachother.
- Now when eating them you want to have 3 mini quiches at a time. I microwave mine for a minute and 30 seconds. Or have like 1 in a low carb tortilla or on a keto hamburger bun.
- Take 3 big spoonfuls of Greek yogurt and place it next to your quiches.
- Put 2 spoonfuls of whatever dressing you are using on top of the yogurt and mix it. Greek yogurt will easily take on the taste of the dressing and save you some calories plus it gives you good fats you already need. Salt, pepper, garlic powder your quiche. Dip them in the yogurt mixture for heaven.
